Wee Heavy is a style I enjoy drinking. It’s also a style that takes time to mature to prefect drink ability.
Back in October 2014 I brewed this Wee Heavy:
Now 6 months later, the beer taste great. I think taking part of the mash and boiling it down to a syrup made a huge difference. I took 2 liters of wort, put them in a separate kettle and boiled the wort down to the point it looked like liquid malt extract. Then I poured the extract into the main boil. I think this make a huge difference in the final beer.
